Description
This event’s featured ramen is the insanely delicious tori paitan! Tori (meaning chicken) and paitan (meaning white and creamy broth) uses high quality chicken bones, boiled over high heat for 8 hours, creating a delicious broth similar to the Hokkaido/U.S. crazed tonkotsu ramen – but with slightly less pork funk and richness. The tare (seasoning) in this bowl is a blend of shio (3 different Hawaiian/Japanese salts) and a touch of shoyu (soy) to create a balanced and super tasty bowl of ramen.
Soup:
Paitan chicken broth
Shio + Shoyu tare
Katsuobushi salt
Duck schmaltz
Toppings:
Pork belly chashu
3 day marinated egg
Menma
Green onion
Note that all event tickets include a water/soft drink. Beer and wine are available for purchase.
